SPINACH FRUIT SALAD

pound fresh spinach,
washed thoroughly |

pint strawberries,
sliced in halves |
| 1 |
kiwi fruit, peeled
and sliced |
| 1/2 |
cup seedless red/purple
grapes, sliced in half |
| 1 |
small can (11 oz.)
mandarin oranges (drained) |
| 1/2 |
cup Fisher
Chef's Naturals walnuts 20+ |
| Dressing: |
| 1/3 |
cup white wine vinegar |
| 3/4 |
cup sugar (less if
desired) |
| 1 |
teaspoon dry mustard |
| 1 |
teaspoon salt |
| 1 1/2 |
Tablespoons minced
onion |
| 1 |
cup vegetable oil |
| 1 1/2 |
teaspoons poppy seeds |

Mix vinegar, sugar, mustard, salt,
onion, oil, and poppy seeds in blender. Toss dressing with spinach,
fruit and nuts just before serving.
Yields: 4 servings
