SALADS & VEGETABLES: SPINACH FRUIT SALAD Back to Recipes

Walnuts

1 pound fresh spinach, washed thoroughly
1 pint strawberries, sliced in halves
1 kiwi fruit, peeled and sliced
1/2 cup seedless red/purple grapes, sliced in half
1 small can (11 oz.) mandarin oranges (drained)
1/2 cup Fisher Chef's Naturals walnuts 20+
Dressing:
1/3 cup white wine vinegar
3/4 cup sugar (less if desired)
1 teaspoon dry mustard
1 teaspoon salt
1 1/2 Tablespoons minced onion
1 cup vegetable oil
1 1/2 teaspoons poppy seeds

Mix vinegar, sugar, mustard, salt, onion, oil, and poppy seeds in blender. Toss dressing with spinach, fruit and nuts just before serving.

Yields: 4 servings
