SALADS & VEGETABLES:
DOUBLE NUT WALDORF SALAD

cups cubed,
un-peeled apple |
| 1/2 |
cup Fisher
Chef's Naturals unsalted cashews, toasted |
| 1/2 |
cup Fisher
Chef's Naturals whole natural almonds,
toasted |
| 1 |
cup celery |
| 2 |
Tablespoons
red wine vinegar |
| 4 |
Tablespoons
sugar |
| 1/4 |
teaspoon
dry mustard |
| 1/4 |
teaspoon
pepper |
|
a few drops
hot pepper sauce (optional) |
| 1/4 |
cup olive
oil |
|
lettuce
leaves |
|
In medium bowl, combine apples,
nuts and celery. In small bowl or blender, combine vinegar, sugar,
mustard, pepper and hot pepper sauce, blend in oil. Drizzle over
apple mixture, blend well. Refrigerate up to 2 hours before serving.
Serve on lettuce.
