Peanut Brittle

Cooking spray
2 cups sugar
1 cup light corn syrup
1/3 cup water
3 cups Fisher Chef's Naturals Raw Peanuts
2 teaspoons butter
1 teaspoon salt
2 teaspoons baking soda

  1. Combine sugar, corn syrup and water; cook slowly until sugar dissolves and mixture reaches 240ºF, about 30 minutes.
  2. Add raw peanuts; cook until mixture reaches 295ºF, about 20 to 30 minutes. Do not allow the mixture to boil over.
  3. Stir constantly during the following additions. Remove from heat, add butter. Stir until butter has melted completely into sugar. Add salt and baking soda. Stir quickly. (The sugar/peanut mixture will change color and rise up in the saucepan.)
  4. Pour mixture evenly onto well buttered, shallow pan. Spread as evenly as possible. Work quickly but carefully, mixture is hot.
  5. When completely cooled, break into pieces. Store covered.
