Nuts and Nutrition
Nuts are one of mankind's oldest foods. Since our
hunting and gathering days, they have provided people with sustenance,
satisfaction and important nutrients. Today, as both interest in
all things culinary and understanding of what constitutes a healthful
diet escalate, nuts are making news.
Once thought of primarily as an excellent source of protein, nuts
underwent some tough times as consumers became fearful of fat. But
nuts, like olive oil, are high in mono- and polyunsaturated fats,
and low in saturated fats. Researchers and nutritionists also are
taking a new look at nuts as a valuable source of many plant-provided
micronutrients, such as the antioxidant Vitamin E. And, as nuts
transcend snacking and move beyond baking, many of the world's best
chefs -- both professional and home based -- are finding new ways
to use delicious nuts in dishes for every section of the menu.
