In medium bowl whisk cream cheese, sour cream and milk until smooth and well blended. Stir in pecans and beef. Cover and refrigerate 15 to 20 minutes. Remove cheese mixture from refrigerator. Place over piece of plastic wrap. Gather up edges of wrap; shape to form ball. Refrigerate 8 hours or overnight. To serve, place cheese ball on serving platter; surround with assorted crackers.
